For now, here’s today’s recipe:
Homemade BBQ sauce
2 cups ketchup-I used organic
1 cup water
1/2 cup apple cider vinegar
5 Tablespoons brown sugar
5 Tablespoons honey
1/2 Tablespoon black pepper
1/2 Tablespoon ground mustard-use a big squirt of regular mustard if you don’t have this
1 Tablespoon lemon juice-fresh or bottled
1 Table spoon Worcestershire sauce
Mix it all up! I put it in a big jar and shook it up.
Here’s how to use it:
Bacon-BBQ bites: We wrapped bite-sized chicken pieces in bacon. Put them into muffin cups and spooned some BBQ sauce over them. Baked at 450 for 25 minutes. So, so good.
Old-fashioned BBQ: We browned 2 pounds of ground beef. Poured off the fat and liquid. Added some red kidney beans and the whole jar of BBQ sauce. Let it simmer for about an hour.
BBQ Dressing: Take 1 cup of the dressing and mix with 1/2 cup of olive oil. Use this dressing over salads. Try a big wedge of iceberg lettuce with crumbled bacon and gorgonzola. Or, field greens with roasted corn, chicken, avocado, and feta.
