Healthy Cilantro Pesto Chicken Nachos
1 bunch cilantro, roughly chopped
1 large garlic clove, roughly chopped
2 tablespoons lime juice
Scant 1/2 teaspoon salt
1/3 cup olive oil
Mix everything together.
Pick your healthy base: Gluten-free corn chips, sweet potatoes, or cucumbers.
Load them up with grilled chicken. Top with the Cilantro Pesto. Then, add tomatoes, salsa, and guacamole. If you want, add a sprinkle of cheese and microwave to let it get melty.
Mac n’ cheese Nachos
1 bag tortilla chips
1/2 can black beans, drained and rinsed
Your favorite Mac n’ Cheese
1 tomato, diced
1 jalapeno, sliced, optional
1/2 cup torn cilantro leaves
1/2 cup of shredded cheese
Line a cookie sheet with parchment-totally for easy clean-up. Pre-heat oven to broil. Layer your chips, mac n cheese, and top with a healthy dose of shredded cheese. Put this under the broiler til your cheese is bubbly. Then, top with your favorite salsa, black beans, and guacamole.
