Good Day PA: On-the-go Meatball Wellingtons

You know how much I value a good, sit-down meal. I truly think magic happens when we share food. But…some nights, you’ve got a car full of hungry kids shuttling between activities.

DON’T SKIP DINNER! I’m not parent-shaming here. This will make your life better, moms, dads, and other people driving kids at night. Good food=better mood. And, less tired, hungry meltdowns at night. Our kiddos need fuel to run, play, and pay attention at their evening activities. Giving them a hearty snack gives them the calories they need and keeps their mood and energy up.

Took a quick poll of the moms after school and then Soph and her pal, Ava, helped me get on-the-go snacks together.

I timed the girls. Took us 6:37. That’s only 6 minutes and 37 seconds to prep turkey and cheese roll-ups, microwave popcorn, homemade snack mix and cheese sticks. They threw bars and fruit strips into our to-go bag too.

We talked about how great my mom’s sausage rolls would be, but they take a long time to make. We needed a super-fast version and came up with these meatball thingies that abc27 Producer Ed Albert named “Meatball Wellingtons.”

Meatball Wellingtons

  • One bag of pre-made pizza dough-Find it in your grocery store’s deli
  • One bag of frozen meatballs
  • 1/2 pound of Mozzarella cheese

Preheat oven to 350. Tear off a chunk of dough. Smooth it out to about the size of your palm–as in the video above. Place 1/2 a slice of cheese on it. Wrap around a meatball. Bake them for 15-18 minutes. Eat immediately or freeze them. When you are ready to run out the door to practice, throw a few in the microwave for a minute and GO!
