Healthy Ceasar with Sweet Potato Croutons

Here’s the healthy Ceasar from abc27’s Good Day Pa! I’ll post the video later today.

18 years ago, I was producing the Noon newscast at abc27 when Daniel Britcher was the guest on the show…making Alfred’s Victorian’s Ceasar Salad. It was the first time we met…and I had no idea he’d be my husband two years later. That first day, I literally asked him 3 times how to spell his last name…never thinking it would be mine!

Here we are many years later, and he’s developed his own style of Ceasar that’s a bit healthier. I will admit that my mom’s super-buttered up croutons are the best! But, when I’m cutting back or just need to work more good whole foods into my day, sweet potato croutons hit the spot.

Ceasar Salad

Mix together in the bottom of a large salad bowl:

1-3 heaping tablespoons hummus

1 tablespoon lemon juice or squeeze of half a lemon

1 tablespoon Worcestershire

1-3 cloves crushed garlic

Take your olive oil bottle and pour it around the bowl three times

Add 1-3 torn-up heads of Romaine lettuce

Season with salt & pepper

Top with grated Parmesan

Sweet Potato Croutons

Toss together:

2 sweet potatoes, cubed

2 Tablespoons olive oil

Sea Salt, to taste

Preheat oven to 450. Roast the sweet potatoes on a parchment lined baking sheet for 25 minutes. Toss into the salad.
